Blueberry Pancakes

Ingredients:

1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
1 1/2 teaspoon sugar
1 egg
1 cup milk
1/2 tablespoon butter, melted
1/2 cup frozen blueberries, thawed

Directions:

  1. Let frozen blueberries thaw for 15 minutes.

  2. In a large bowl, stir together flour, salt, baking powder and sugar. In a separate bowl, beat together egg and milk. Stir milk/egg mixture into flour mixture. Mix in the melted butter. Carefully fold in thawed blueberries.

  3. Lightly oil a griddle or frying pan over low heat. Pour the batter onto the pan, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
