Cherry Apple Berry Baked Oatmeal

Ingredients:

2 cups cherry apple berry blend

1 1/2 cups unsweetened applesauce

1/4 cup brown sugar

2 eggs

1/2 teaspoon vanilla extract

1/2 teaspoon almond extract

1/4 teaspoon cinnamon 

1/4 teaspoon salt

3/4 teaspoon baking powder

1 cup milk

2 cups rolled oats

Directions:

  1. Take the cherry apple berry blend out of the freezer and let thaw for 10-15 minutes.

  2. Preheat oven to 375°.

  3. In a large bowl, stir together applesauce, eggs, brown sugar, vanilla extract, almond extract, cinnamon, salt and baking powder. Once combined, add milk and whisk until smooth.

  4. Chop the cherries, apples and blueberries and add them to the bowl of liquid ingredients. Add in the rolled oats and stir until combined.

  5. Lightly coat an 9"x9" baking dish with cooking spray. Pour the oat mixture into the dish and bake for 40-45 minutes or until golden brown.

  6. Split into six portions and serve warm. Add brown sugar or honey to taste.
