Cherry Lemon Bread
1 cup sugar
1/2 cup butter, softened
1 tablespoon vanilla extract
1 tablespoon lemon zest
3 tablespoons lemon juice
1 cup milk
2 cups all-purpose flour
1 teaspoon baking powder
1 cup frozen cherries
1 cup powdered sugar
2 tablespoons milk
Preheat oven to 350°.
Grease a 9-inch loaf pan with cooking spray.
Cream together the butter and sugar with an electric mixer.
Add the eggs, lemon juice, lemon zest, milk and vanilla extract, making sure to beat well into the mixture.
Add the baking powder and flour. Stir until the ingredients are mixed together well.
Add the cherries and softly fold the cherries into the mixture with a spatula. Be careful not to crush the cherries.
Pour the batter into the loaf pan and bake for 1 hour.
Mix together the icing ingredients until smooth.
Take the bread out of the oven and cool for 10 minutes in the pan. Remove from pan and drizzle with icing.
