Cranberry Balsamic Roasted Chicken



3 chicken breasts

2 sprigs fresh thyme

1 teaspoon Italian seasoning

1/2 cup cranberries

1 tablespoon balsamic vinegar

1 tablespoon maple syrup


2/3 cup cranberries

2 tablespoons olive oil

2 tablespoons maple syrup

1/4 cup balsamic vinegar

1/4 teaspoon sea salt

1/4 teaspoon black pepper

1 teaspoon garlic


  1. Add all the ingredients for the marinade into a blender and pulse until liquefied and smooth.

  2. Pour the marinade over the chicken, coating evenly. Place in the fridge to marinate for at least 30 minutes. Best to marinate the chicken overnight, if possible.

  3. Preheat oven to 375°. 

  4. Remove chicken from the refrigerator and add extra cranberries, thyme and Italian seasoning on and around the chicken.

  5. Bake for 25 minutes. Mix together balsamic vinegar and maple syrup and spoon on top of the chicken. 

  6. Put back in the oven and cook until fully done, approximately 20 minutes.
