2 sticks unsalted butter, softened

1 cup light brown sugar

1 1/2 cups sugar

4 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

3/4 teaspoon salt

3 1/4 cups all-purpose flour

8 cups frozen peach berry blend

3 tablespoons maple syrup

1 cup sliced almonds


  1. Preheat oven to 350°. Beat butter, light brown sugar and 1 cup of sugar at medium speed with an electric mixer. Add eggs one at a time, beating until blended. Stir in vanilla. 

  2. Combine baking powder, salt and 3 cups of all-purpose flour. Gradually add flour mixture to butter mixture, beating until combined. Spread 3/4 of the batter into a greased 13x9 inch pan. 

  3. Combine remaining 1/2 cup sugar and 1/4 cup flour in a small bowl. Measure out the frozen peach berry blend. Slice the peaches in half. Add the fruit and maple syrup to the sugar/flour mixture and stir until thoroughly combined. Spoon mixture on top of batter in pan. 

  4. Dollop remaining 1/4 of batter on top of the fruit mixture. Sprinkle with almonds. 

  5. Bake at 350° for 1 hour or until golden brown and bubbly. Cool completely in pan for 1 hour. Cut into bars and serve. 

  6. Top with vanilla ice cream, if desired.
