Peach Ice Cream
3 cups frozen peaches
3/4 cup whole milk
2/3 cup sugar
1 1/2 cups heavy cream
1 1/2 teaspoon vanilla extract
Pinch of salt
Take peaches out of the freezer and put into a small bowl. Let thaw for 10-15 minutes or until soft.
Put the peaches into a food processor and pulse until finely chopped. Remove from food processor and reserve in a small bowl.
In a medium bowl, combine the milk, sugar and salt. Stir until the sugar is dissolved. Stir in the heavy cream and vanilla extract. Stir in peaches.
Cover and refrigerate for 1-2 hours or overnight. Pour the mixture into an ice cream maker and let churn for 15-20 minutes.
Put ice cream in a container and leave in freezer for 1-2 hours to give it a firm consistency.
