Peach Salsa


3 cups frozen peaches, diced

2 cups tomatoes, diced

1 green bell pepper, diced

2 jalapenos, diced

1/2 medium yellow onion, diced

1/2 bunch cilantro, chopped

2 tablespoons lime juice

1 1/2 teaspoon salt

1/4 teaspoon black pepper


  1. Take peaches out of the freezer and put into a small bowl. Let thaw for 30-45 minutes or until soft.

  2. Finely chop tomatoes, bell pepper, jalapenos, peaches, onion and cilantro. Make sure to remove the seeds from the bell pepper and jalapenos.

  3. Add lime juice, salt and pepper. Stir everything together until mixed well.

  4. Cover with plastic wrap and refrigerate for 1-2 hours
