strawberry blueberry cookies
1/2 cup butter, melted
1/2 cup brown sugar
1/2 cup sugar
1/2 teaspoon salt
2 teaspoons vanilla extract
1 tablespoon lemon zest
1 1/4 cups all-purpose flour
1/4 teaspoon baking soda
1/2 cup white chocolate chips
1 1/2 cups frozen strawberry blueberry blend
Preheat oven to 350°. Line two baking sheets with parchment paper.
Take the frozen strawberry blueberry blend out of the freezer and let thaw for 15-20 minutes. Chop up the strawberries into small pieces.
In a large mixing bowl, combine the melted butter with both sugars, salt, vanilla and lemon zest. Stir until combined.
Add the egg and mix until completely blended. Add in flour and baking soda and stir until combined.
Fold in the chopped strawberries, blueberries and white chocolate chips.
Use two tablespoons to shape the dough into a ball. Add to the lined baking sheets, with 2-3 inches between each dough ball.
Bake for 12 minutes until the edges are golden brown. Let cool for 10-15 minutes.
